Healthy Plum & Nectarine Tart Recipe

Plum & Nectarine Tart
Serves 8-10
Prep Time: 20 minutes
Cook Time: 1 hour
Ingredients Base:
- 1 1/4 cup all-purpose flour
- Pinch cinnamon
- 1/2 tsp salt
- 1/4 tsp baking powder
- 8 tbsp coconut oil, melted
- 1/2 cup sweetener of choice
- 1/4 cup coconut sugar
- 1 tsp pure vanilla extract
- 4 tbsp water
Filling:
- 2 medium nectarines, sliced thin
- 2 large plums, sliced thin
- 2 tbsp flour
- 3 tbsp sweetener of choice
- 2 tbsp sliced almonds (for topping before baking)
Method:
Preheat oven to 175 degrees C and prepare a tart pan with a removable bottom. You can line with foil or grease if you prefer. Set to one side.
Prepare the filling by tossing all ingredients together in a bowl to ensure the plums and nectarines are well covered in the flour and sweetener; pop to one side.
Make your dough by mixing flour, cinnamon, salt and baking powder.
In a separate bowl combine the sweetener, sugar and coconut oil until well combined. Add vanilla and mix
Add the flour mix and 4 tablespoons of water and mix for around 30 seconds until it forms a crumbly mixture.
Remove around 1⁄2 cup of the crumb base to use as part of the topping later.
Press the remaining crumb dough into the tart tin until even. Top with the fruit, making it as even as possible and sprinkle over the reserved crumb along with slivered almonds.
Bake for 1 hour.
Remove from the oven and leave to cool completely before serving.
Sprinkle with a little powdered sugar for extra sweetness and serve either on its own, with ice cream or yoghurt.
